Instructions
Place a large pan over medium heat.
Add ghee and diced potatoes.
Stir potatoes and oil together and cook for about 10 minutes, or until soft.
Chop the rest of the ingredients into small pieces and add them to the pan along with the spices.
Stir everything together and continue cooking for 5-10 minutes, or until the vegetables are soft.
