Ingredients

  • 250 g sweet potato
  • 1 Onion yellow onion 110 g
  • 1 Red Capsicum red capsicum 119 g
  • 1 Zuccini zucchini 196 g
  • 200 g White Button Mushrooms
  • ¼ tsp garlic powder
  • ½ tsp cumin powder
  • ½ tsp smoked paprika
  • 2-3 tbsp ghee

Instructions

  • Place a large pan over medium heat.
  • Add ghee and diced potatoes.
  • Stir potatoes and oil together and cook for about 10 minutes, or until soft.
  • Chop the rest of the ingredients into small pieces and add them to the pan along with the spices.
  • Stir everything together and continue cooking for 5-10 minutes, or until the vegetables are soft.
