The baked apple dish is one of my favorites for the low methionine diet as it contains barely any methionine but is packed with fibre to feed the gut bacteria.
Remove the core of the apple then cut the apples as you choose, either in wedges or slices.
Place the apple in the baking dish.
Cover the apple with the remainder of the coconut oil and then add the cinnamon.
Bake in the oven for 10 minutes.
Top with macadamia nut and bake for another 5-10 minutes
The apple bake will be ready when the edges start to brown up.

Soluble fibre bulks up in the colon as it absorbs water. The benefit of soluble fibre is it is very gentle and helps to clean out any little pockets that may be present in the colon. Apples have a fairly low glycemic index meaning that their sugar is released slowly in the body, this is due to the high amount of soluble fibre. The slow release of energy can stop any spikes in blood sugar and insulin. The addition of the coconut oil and nuts further slows the absorption therefore making this the perfect meal for anytime of the day.The apple bake is a perfect choice for someone who may have reached their methionine quota for the day but still feels like having something to eat.
