Ingredients

  • 100 g Fresh Broccoli
  • 150 g Avocado
  • 100 g Cucumber
  • 1 cup Lettuce
  • 1/2 cup Parsley
  • 1/2 cup Dill

Lemon Parsley Dressing

  • 1 bunch Parsley Chopped very finely.
  • 1 ½ Lemons Lemons juiced and zested.
  • 1 tbsp Tahini
  • 2 tbsp Olive oil
  • 1 tsp Tamari
  • 1 tsp Honey

Instructions

Method for Salad

  • Prepare a bowl of water with ice cubes
  • Bring a medium pan of water to the boil.
  • Add broccoli and boil for 5 minutes.
  • Drain the broccoli and plunge into iced water.
  • Slice cucumber and avocados as you like. Either sliced or cubed.
  • Place shredded lettuce at the base and arrange the broccoli on top.
  • Add the cucumber and avocado on top.
  • Add a small amount of the lemon parsley dressing

Method for Dressing

  • Place all dressing ingredients into a jar and shake to combine.
