Ingredients

  • 4 Sweet Potato medium sweet potatoes
  • 1 tbsp olive oil
  • ½ Red onion Small
  • ¼ chopped fresh mint
  • 1 tbsp chopped fresh oregano
  • ¼ Chopped flat-leaf parsley
  • ¼ C sliced black olives
  • 1 tbsp capers chopped
  • Pinch black pepper

Instructions

  • Preheat oven to 200 degree C
  • Line a large baking tray with baking paper
  • Make a slit down the center of each sweet potato, keeping them intact.
  • Place the potatoes on the baking sheet and cook for 45-50 minutes until soft inside.
  • Whilst the potatoes are baking, heat the oil in a small pan and add the red onion
  • Cook over gentle heat for about 6 minutes, or until softened.
  • Put this mix in a bowl and let it cool.
  • Mix in the remaining ingredients
  • When the sweet potatoes are ready, scoop out the flesh and stir into the onion mixture.
  • Divide into four equal portions and spoon back into the sweet potato skins.
  • Add macadamia nut cheese on top..
