Ingredients
- 4 Sweet Potato medium sweet potatoes
- 1 tbsp olive oil
- ½ Red onion Small
- ¼ chopped fresh mint
- 1 tbsp chopped fresh oregano
- ¼ Chopped flat-leaf parsley
- ¼ C sliced black olives
- 1 tbsp capers chopped
- Pinch black pepper
Instructions
- Preheat oven to 200 degree C
- Line a large baking tray with baking paper
- Make a slit down the center of each sweet potato, keeping them intact.
- Place the potatoes on the baking sheet and cook for 45-50 minutes until soft inside.
- Whilst the potatoes are baking, heat the oil in a small pan and add the red onion
- Cook over gentle heat for about 6 minutes, or until softened.
- Put this mix in a bowl and let it cool.
- Mix in the remaining ingredients
- When the sweet potatoes are ready, scoop out the flesh and stir into the onion mixture.
- Divide into four equal portions and spoon back into the sweet potato skins.
- Add macadamia nut cheese on top..
