Ingredients

  • 1 head Cauliflower 588g - you can buy frozen cauliflower rice but please be aware that it can produce a lot of water during the cooking process
  • 1 tablespoon coconut oil
  • ¼ tsp Salt
  • 1 tablespoon Ghee
  • 6 tablespoons Coconut Milk

Instructions

  • Shred the cauliflower to a rice consistency. There are many expert tutorials available on how to do this.
  • Heat the pan on a medium heat then add the coconut oil. Once the oil heats a bit, add in the cauliflower rice and salt and cook for 5 minutes. Stir occasionally.
  • Add the ghee, let this melt and then mix it through the cauliflower mix.
  • Add the coconut milk and coriander, mix through and serve.
