Whilst on the lookout for ingredients that could be used in low-methionine baking, I came across a product called ‘Apple Flour’ that is produced by a company called Sensory Mill.
Apples are very low in methionine, in fact one whole apple contains just one milligram of methionine making them a very useful food. Apples contain soluble fiber which is highly beneficial to health as it feeds our little gut bacteria, these bacteria then help us with our immune system. Apples also contain apple pectin. Apple pectin has the ability to absorb water and this gel gets into any little pockets that may be present in the intestine and then cleans them out.
Dates are also low in methionine and very high in calories which can help you ‘top-up’ the daily calorie count needed to achieve weight maintenance which is a big problem for patients choosing the low-methionine diet as part of their cancer therapy.
Coconut is also a super food that is high in nutritious fats. Coconut is the best ‘bang-for-buck’ low-methionine food as it packs in a ton of energy per gram. Coconut is very filling due to its fat content. Coconut contains saturated fat which is crucial in helping the body absorb fat-soluble nutrients such as Vitamin D and A. Both of these nutrients can assist cancer and there is much research available on this.
The original recipe called for Walnuts, however they were too high in methionine so they are replaced with macadamia nuts instead which are low in methionine.
I took the recipe that was provided on the packet of Apple Flour and simply made a couple of adjustments in order to make it into low-methionine.

Ingredients
- ¼ cup Apple Flour Sensory Mill
- ½ cup Pitted Dates
- ¼ cup Water
- ½ cup Desiccated Coconut
- ½ cup Macadamia Nuts 62g
- 1 tsp Cinnamon
Instructions
- In a small saucepan, mix the dates and the water and heat until the dates are soft. Blend or mash the dates depending on the consistency that you would like for the final product.½ cup Pitted Dates, ¼ cup Water
- In a large mixing bowl, add remaining dry ingredients to the wet date mix (from step one) together and mix until a sticky dough is formed.¼ cup Apple Flour, ½ cup Desiccated Coconut, 1 tsp Cinnamon, ½ cup Macadamia Nuts
- Roll dough into 12 balls and store in an airtight container in the fridge.
